六氫番茄紅素是一種橙色色素，天然存在于西紅柿和其他蔬菜。是類胡蘿卜素在形成過程中的一個(gè)中間物質(zhì)，具有很強(qiáng)的活性與抗氧化作用，是第二個(gè)類胡蘿卜素生物合成的產(chǎn)物。^[2]

分析表明，番茄紅素和六氫番茄紅素在大部分的水果和蔬菜中都存在。^[3]這些類胡蘿卜素的積累可能通過幾種機(jī)制保護(hù)皮膚：作為紫外線吸收劑，抗氧化劑，作為抗炎劑。 ^[4]^[5]
